I really wanted to get my post comparing rebate apps out today, but life had other plans. For some reason I just couldn’t get it the way I wanted it. So I will give it some more thought. Maybe I will have it ready next week. Until then, I wanted to share this recipe with you!
I love making pancakes, and have been making these for years. One day I simply decided to throw in some fall spices. It turned out great and I have been making them ever since. Here is how I make pumpkin spice pancakes. (I have linked all my favorite brands.)
- 1 cup self rising flour
- 1cup milk
- 1 egg
- 2 Tbs. unsalted butter, melted
- 1/2 tsp pumpkin pie spice
- 1/2 tsp nutmeg (optional)
- 1 pinch cloves (optional)
- 2 Tbs. sugar (optional)
Mix flour, sugar, and spices in a medium bowl. In a small bowl mix egg, milk, and butter. Once liquid ingredients are blended, add to the dry ingredients. Heat about 1 teaspoon butter in a skillet or griddle over medium heat. Drop batter by the large spoonful onto the skillet. Cook until bubbles form. Flip and cook the other side. Repeat with remaining batter.
*I do not add sugar to my batter because I think the syrup is sweet enough. Sometimes I only use the pumpkin pie spice, it really just depends on my mood. I estimated on the amount of spice, because I really just add it without measuring. Adjust the amount of spice to your preference.
